RECIPE & GIVEAWAY: Green Chili Chicken & Rice

I’ve heard people say things like “I don’t know how I ever got along without one for so long.” Or, “It’s so easy, so simple, so effortless.” And, “Delicious. Hearty. Healthy.”

Most of the time I chalk it up to hype. Someone, somewhere is exaggerating.

And then I bought my Aroma Houseware’s 6-Cup Rice Cooker.
It’s small. Convenient. And on a day like today when the outside temperature reached over 100 degrees, I didn’t have to turn my oven or stove on to feed my family a healthy, hearty, warm meal.

The rice comes out moist and full every time. I’ve steamed vegetables, chicken, and fish as well. The steam basket is small, allowing for just two servings of either meat or vegetables. But for those times when Dot’s out with her friends, I’m able to make a serving of each for myself.

I love that this versatile cooker lets me cook rice and steam at the same time. Or I can opt to do just one task. I also like that I can make as little as 2 cups of rice or as much as 6 cups. What’s better than fresh rice under a steamed salmon or lemon peppered vegetables? Having more for later!

The cooker/steamer averages a 20 minute wait time. It depends on what you’re preparing. The Cooker has an inner spring that, once the cooking is done, gently pushes the inner pot off the heating coils. It can keep your food warm for up to 12 hours without scorching!

It’s incredibly easy to use, clean, and store. I don’t know how I ever got along without one for so long.

Total Time: 28 minutes

Yield: 6 servings

Serving Size: Approx. 1 cup

Ingredients

  • 1 1/2 cup rice
  • 3 cups low-sodium chicken broth
  • 2 tablespoons dried minced onion
  • 1/2 teaspoon salt
  • 1 can (10 oz.) chicken breast
  • 1 can (4 oz.) diced green chilies with liquid

Instructions

  1. Place all ingredients into inner cooking pot.
  2. Stir until evenly distributed.
  3. Place the inner cooking pot into the rice cooker.
  4. Place the lid securely onto the rice cooker.
  5. Press the COOK switch.
  6. Allow rice to cook until the rice cooker switches to "Warm".
  7. Stir and serve immediately.

Can’t you just smell the steamy aroma of chilies, chicken and rice? My house smelled so delicious, and the flavor did not disappoint!

We served it up with a corn tortilla and a glass of my berry-infused water. What a refreshing meal!

The Versatile Blogger Award!

Huge shout out to Momma Sylvia of Homeschooling Through Triumphs, Trials and Tragedies. I found her blog through BlogHer’s monthly NaBloPoMo two weeks ago, and have been enraptured with her daily posts ever since. She’s honest about her family and what they go through on a daily basis, just as her Blog Name implies.

She nominated me for the Versatile Blogger Award! The rules are for me to (a) list seven random facts about myself and (b) nominate 15 other blogs.

Well, 15 is a pretty huge number, so I’m not sure I’ll have that many to nominate, but here’s my seven random facts:

  1. I’m a huge popcorn addict.
  2. We have five cats but the oldest, Lizzie Cat, is definitely MINE. She loves to be wherever I am, and recently has started crying when I leave home.
  3. I’ve always wanted to be a writer; and while being unemployed doesn’t pay the bills, it does allow time to work on some great projects!
  4. I just recently started liking New England Clam Chowder.
  5. I often feel I was born in the wrong era. I would’ve been a great friend to Laura Ingalls or John-Boy Walton.
  6. I’m only 2% Italian, but that’s the part I cling to most. I decorate, cook, and speak Italian… more than any other part of my ethnicity.
  7. I name my kitchen appliances and other inanimate objects. But mostly kitchen appliances so I can say, “Let’s have dinner with Isabella tonight” or “Lola’s bringing the drinks”. I don’t know if that makes me sad, lonely, or creative… but I still do it.

My Baby Blog is Growing Up!

I’ve been working diligently on bringing you a better blog: one that’s on par with others that lead the Blogosphere. And it’s paying off.

My Daughter Is Not a Blogger

While watching ROYAL PAINS on the TV tonight, I asked Dot what I should write about on the Blog for tomorrow (which is this post you’re currently reading).

Here are her contributions:

*Interior Decorating: Sometimes it’s warm. Sometimes it’s cold. It feels like Starbucks.
*Marijuana. It’s illegal.
*Tissues. They can be used to wipe tears and blow noses. Multi-taskers.
*Applesauce. It’s like cottage cheese but fruity. Because it’s lumpy but tasty.
*Facebook. How young teenagers like to post about how they are married to each other. And girls. Like when girls say “they’re married” but they’re not.

“What’s the Word?” Wednesday [Blog Hop]: July 18, 2012

It’s already Wednesday.

Wait. What?

It’s already Wednesday?!

This week has gone by far too fast for me. Dot’s now enrolled in college. College! I’ve got ten resumes out for review, and I’m considering signing up with LinkedIn.com and Kickstarter.com. [If any of you have advice regarding either of those sites, please… I’m all ears!] We had our second class of cake decorating, and Dot’s creation garnered her incredible attentions. I don’t often put photos up on my Facebook page unless they’re linked to posts. But Monday night I posted her cake, as well as wrote about it yesterday. I don’t have tons of followers on Facebook, but I was really impressed to see that Dot’s Cake is my most popular photo to date. Way to go, Kid! I’m one proud Momma!
