Dot’s grandparents received a shipment of mail-order chicks last week. I know. Mail order?! But apparently it’s quite humane. They ship overnight with air filter and cooling packs to keep the chicks comfortable. Good to know.

They ordered them quite a few weeks ago, which allowed time for Grandpa to build this amazing chicken coop.

Baked Frittata with Photos

A year ago I posted my recipe for Baked Frittata. It’s still a family favorite: inexpensive to make, delicious to eat.

It’s why Hayley calls me “Momma” with a smile.
It’s my Go-To Lazy Weekend recipe.
It’s what I bribe my brothers with. [Let’s just say they’re coming home for the holidays… trust me!]

But the new Blog look mandates a new recipe look, dontcha think? So here it is. A familiar recipe with a new look.

Baked Frittata

Recipe: Baked Frittata

Frittata is basically a baked omelet. You can add whatever ingredients and seasonings you like. They can be served for breakfast, brunch, dinner or snack. You can add salsa or marinara, depending on the ingredients. This is my favorite blend:

 

INGREDIENTS:

8 large eggs
1 cup milk
3/4 cup shredded 4-cheese blend
1/2 cup chopped or mini pepperoni
1/3 cup diced tomatoes
1/3 cup diced green chilis
1/3 cup chopped mushrooms
1/2 green pepper, diced
1/2 red pepper, diced
1/2 large onion
Salt, pepper, oregano, and other Italian seasonings to taste
